There are over 3,100 whitewater river miles in the state of Idaho. Our story started on the Middle Fork of the Salmon and has had many meanderings through just a fraction of those thousands of miles. Marshall was a river guide and Hailey was a guest on a trip, we both love the river, and we both love Idaho.
The sparkling wine we make is a tribute and thanks to the whitewater that has shaped our story. We strive to make a wine as alive as the rivers that inspire it.
Did you hear the news?! We have been named the 2018 Idaho Winery to Watch by Great Northwest Wines and Wine Press Northwest. We are so excited and honored to be in a little bit of the wine spotlight. Check out the full article here, and the other great stories about wine in the PNW.
100% Bitner Vineyards Syrah fermented dry and then bottled with additional sugar and yeast for a secondary fermentation in bottle. A true “methode traditionale” sparkling wine made in Idaho, with Idaho fruit, by Idahoans to boot! Aged sur lees for 21 months, riddled by hand, disgorged by hand, and finished with a hint of sugar (4g/l). Fine bubbles burst as you inhale giving a zing to the berry and cranberry preserve aromas. The flavors as you sip develop from apple, to pluot, to pomegranate. It sits evenly on the palate, but seems to dance around in the front of your mouth, which leads us to believe it could be fun to pair with something meaty and fatty, such as pork.
100% Chardonnay from Bitner Vineyards. A true “methode traditionale” sparkling wine made in Idaho, with Idaho fruit, by Idahoans to boot! Aged sur lees for 33 months, riddled by hand, disgorged by hand, and finished completely dry. The wine is bright and sunny in the glass, and continues to be so on the nose with fresh starfruit, jonagold apple, and a hint of golden raspberries. The fine, persistent bubbles, help carry the flavors of apple and pear over the palate, and then build as brioche and clotted cream on the finish. Try it next to the 2015 Whitewater to understand why, when we were tasting blind samples, we had to make both of these wines.
100% Bitner Vineyards Chardonnay fermented dry and then bottled with additional sugar and yeast for a secondary fermentation in bottle. A true “methode traditionale” sparkling wine made in Idaho, with Idaho fruit, by Idahoans to boot! Riddled by hand, disgorged by hand, and finished with just a hint of sweetness. Very fine bubbles and a cheerful yellow hue with tart apple, juicy pear flavors, and fresh brioche.
