There are over 3,100 whitewater river miles in the state of Idaho. Our story started on the Middle Fork of the Salmon and has had many meanderings through just a fraction of those thousands of miles. Marshall was a river guide and Hailey was a guest on a trip, we both love the river, and we both love Idaho.
The sparkling wine we make is a tribute and thanks to the whitewater that has shaped our story. We strive to make a wine as alive as the rivers that inspire it.

3100 Etched Stolzl Tulip Glass
100% Lanae Ridge Vineyards Syrah. Aged sur lees for 30 months, riddled by hand, disgorged by hand, and finished with a hint of sugar (4g/l). A strong mousse of bubbles on this rosé reminds us a little of a tart cherry pop rock treat, but quickly gets serious with traditional Syrah rosé flavors of cranberry, Bing cherry, and a hint of almond pastry. If this wine were a river experience it might be kayaking Marsh Creek, where everything is fun but you can't give into the playfulness because there could be a tree across the river.
100% Bitner Vineyards Chardonnay. Aged sur lees for 36 months, riddled by hand, disgorged by hand, and finished with 14g/l sugar. Showcasing the high acidity of this vintage can stand up to a sugar addition and not taste the least bit sweet. Pear compote and apple strudle dominate with pops of fresh white nectarine.
100% Bitner Vineyards Chardonnay - bright and slightly golden, a nose of vanilla and honeysuckle with some caramel tones underlying the fresh apple juice aromas, a sip leads with fuji apple, anjou pear, and a traditional apple tart, strong bubbles and a full mouthfeel. This wine is swift and dynamic, like entering 5 mile canyon on the Brunea River.
100% Bitner Vineyards Syrah. Aged sur lees for 22 months, riddled by hand, disgorged by hand, and finished with a hint of sugar (4g/l). Fine and persistent bubbles burst as you inhale giving a zing to the berry compote and strawberry tart aromas. The flavors as you sip develop from cranberry, to red apple.
The most sure way to get ahold of some 3100 wines, is to “get on the boat” and join our club. We make a very limited amount of wine each year and always give first dibs to our wine club members. If we don’t sell out to our club we also have an email list you can get on to make sure you know when we have wine available. We think you should always have some bubbles to toast all the adventures in your life.
