A true “methode traditionale” sparkling wine made in Idaho, with Idaho fruit, by Idahoans to boot! Aged sur lees for 21 months, riddled by hand, disgorged by hand, and finished with a hint of sugar (4g/l). Fine bubbles burst as you inhale giving a zing to the berry and cranberry preserve aromas. The flavors as you sip develop from apple, to pluot, to pomegranate. It sits evenly on the palate, but seems to dance around in the front of your mouth, which leads us to believe it could be fun to pair with something meaty and fatty, such as pork.
