100% Chardonnay from Bitner Vineyards. A true “methode traditionale” sparkling wine made in Idaho, with Idaho fruit, by Idahoans to boot! Aged sur lees for 33 months, riddled by hand, disgorged by hand, and finished completely dry. The wine is bright and sunny in the glass, and continues to be so on the nose with fresh starfruit, jonagold apple, and a hint of golden raspberries. The fine, persistent bubbles, help carry the flavors of apple and pear over the palate, and then build as brioche and clotted cream on the finish. Try it next to the 2015 Whitewater to understand why, when we were tasting blind samples, we had to make both of these wines.
