Aged sur lees for 30 months, riddled by hand, disgorged by hand, and finished with just a hint of sweetness. Persistent and fine bubbles in the glass with a mellow sunny yellow hue. Baked apple tart notes with underlying ripe apricot, pear, and fresh baked ciabatta bread.
