100% Bitner Vineyards Chardonnay fermented dry and then bottled with additional sugar and yeast for a secondary fermentation in bottle. A true “methode traditionale” sparkling wine made in Idaho, with Idaho fruit, by Idahoans to boot. Aged sur lees for 30 months, riddled by hand, disgorged by hand, and finished with just a hint of sweetness. Persistent and fine bubbles in the glass with a mellow sunny yellow hue. Baked apple tart notes with underlying ripe apricot, pear, and fresh baked ciabatta bread.
