We make very classically inspired sparkling Idaho wines in the style that they make sparkling wines in the Champagne region in France, but we also have a new world twist on them. Different varietals, different names, and different timelines than the “classic” Champagne route.
We began to dabble in our own winemaking in 2013 and produced our first “commercial” vintage in 2014. That year we started working with Ron Bitner to bring in Chardonnay to make a “blanc de blanc” style sparkling Chardonnay. Through the winemaking process we began to build our own story and find our winemaking voices and decided to call it “Whitewater” because if you don’t know what you’re doing it can look a little tumultuous and frothy coming out of the bottle, just like a rapid in a river.
We began to add to our profile in 2015, we brought in more Chardonnay and some Syrah to make a rosé. To date it has been our lightest pink wine, but the most food friendly. Try it with chicken marbella, that's our favorite!
